Really, honey is hot. Artisanal honeys are popping up everywhere. Honey production and sales now joins artisanal chocolate, olive oils and vinegars as another important food trend. Unlike that adorable, squeezable plastic bear that every kitchen possessed way back when, these honeys are often all-natural, sometimes raw and usually come with some distinctive flavor profile. Single-sourced honeys are especially a growing segment where the involved bees are restricted to one type of plant or bloom.
